Mirin is a sweet rice wine, which is used in most Japanese dishes. It's made by a fermentation process, which gives it a unique taste. There are cheaper imitation products on the market, but hon mirin means "real mirin", and it's the right thing to use if you want an authentic Japanese flavour in your dishes. Contains 14 % alcohol, similar to when you use white wine for cooking.
