Dashi is absolutely essential to give traditional flavor in Japanese dishes. This dashi comes in practical small bags, so it's easy to add the correct amount needed. Shimaya dashi is based on bonito, which is a kind of tuna, and it adds a particularly strong umami flavor to the dish.
Use this dashi for noodle soups, oden, miso soup, etc.
