Mirin is a sweet rice wine that is widely used for cooking in Japan, and is among the basic ingredients in the vast majority of Japanese dishes. It is made by a fermentation process, which gives it a very special taste that is cannot be imitated. There are cheaper imitation products, but hon mirin means "real mirin" and is therefore the only choice if you want the taste to be authentic. Contains 14% alcohol, which of course evaporates during cooking.
