Shiro-Dashi is an alternative to Tsuyu when you don't want to add dark color to your dish. It is made from lots of delicious things like white soy sauce, bonito dashi, mirin, konbu seaweed and shiitake mushrooms, and adds a wonderful, full-bodied taste.
