Kamaboko is steamed lengths of mashed and moulded fish meat, which is often used as decoration on dishes sliced thinly or shredded. It's particularly common for Japanese New Year meals, where the white and red colours bring good luck.
This one is white at the core but has a pink "crust" on top.
