Asahi Shuzo is located near Yamaguchi at the Western Coast of the main island Honshu. It's a relatively young manufacturer, established in 1948, but probably one of the most progressive ones, as they combine new technology with what they believe works of the traditional techniques. Their specialty is to only use the best quality of rice and then mill the outer part away, leaving only the starch contents in the middle to obtain the purest possible taste from their brews.
Asahi Shuzo call their sake Dassai, and the number after the name indicates how many per cent of the original rice grain is left after polishing. That means that for this sake they used rice polished down to 23 % of the original size! That is extraordinary.
The style is fruity and aromatic, Dassai 23 offers a mineral nose with pear, pineapple, and vanilla, and in the mouth there are aromas of fennel, pear, and marshmallows. It's incredibly soft and light, and for that reason it's best suited to be enjoyed on its own, or accompanying very light dishes, such as sashimi.
