Here is another version of easy udon noodles, this time with beef. For 3 people this is what you need:
250-300 gr thinly sliced beef
1 pack of Itsuki Ex Udon
50 ml of water
50 ml of soy sauce
50 ml of mirin
50 ml of white wine
60 gr of sugar
7.5 gr of Shimaya Dashi no moto (1.5 sachet)
3 eggs
Some finely chopped spring onion as garnish
First cut the meat in shorter pieces. Add water, soy sauce, mirin, sugar, white wine, and dashi in a pot and let it boil:
At this point, also start preparing the onsen eggs as described in the recipe for udon with onsen eggs. Place the meat in the sauce:
Boil at medium heat with no lid on:
When the liquid has been reduced well, turn off the heat:
The eggs should also be done about now, and the noodles can be cooked according to the instructions - 750 ml of water set to boil, 3 packs of noodles cooked for about 1 minute while loosening them up, add the soup powder and boil for another minute while stirring.
Now take 3 bowls and add 1/3 of the noodles and the soup in each, divide the meat between them, crack an egg in each bowl, and sprinkle with spring onions. Enjoy!
